Juicy Lucy
A single ground beef patty folded around melting American cheese, seared on a griddle until the crust sets and the cheese core turns molten. Built on a toasted gluten-free bun with pickles, onion, ketchup and mustard. The signature cheese-stuffed centre defines this Minnesota bar burger.

Instructions
1
Prep
Divide the ground beef into two thin equal patties, season both sides with salt and pepper, pressing each wider than the bun.
2
Stuff
Fold the American cheese into a square, centre it on one patty, top with the second and crimp the edges tightly to seal.
3
Sear
Heat a dry cast-iron skillet over medium-high heat for 3 minutes, then cook the stuffed patty 4 minutes until a dark crust forms and it releases easily.
4
Sear
Flip and cook 4 minutes more over medium-high until the second side is deeply browned and the centre feels soft and molten when pressed.
5
Toast
Butter the gluten-free bun and toast it briefly in the skillet until lightly golden.
6
Plate
Rest the burger briefly, spread ketchup and mustard on the bun, add onion and dill pickle slices, cap and serve immediately.
