Hotteok

A Korean street-food classic: a soft, chewy yeasted wheat-and-rice-flour dough pan-fried in oil and stuffed with a molten pool of brown sugar, cinnamon and crushed walnuts. The dough puffs and crisps at the edges while the filling turns to warm syrup inside, making hotteok one of the most beloved winter snacks sold from Seoul's street carts.

Instructions

1
In a bowl, whisk together the lukewarm milk, yeast and 1 teaspoon of the sugar; let sit 5 minutes until foamy.
2
Sift the flour, glutinous rice flour, remaining sugar and salt into the yeast mixture and stir to a sticky, soft dough.
3
Cover and let the dough rise in a warm spot for 60 minutes, until doubled.
4
Meanwhile mix the brown sugar, cinnamon and chopped walnuts in a small bowl for the filling.
5
Oil your hands generously, divide the risen dough into 2 equal pieces, and flatten each into a disc in your palm.
6
Place a spoonful of the brown sugar filling in the centre of each disc, then gather the edges up and pinch firmly to seal into a ball.
7
Heat the vegetable oil in a flat frying pan over medium heat, then place the sealed dough balls seam-side down.
8
Press each ball flat with an oiled spatula into a thick disc about 1cm high and fry for 2 minutes until golden underneath.
9
Flip carefully and press again lightly, frying the second side for 2-3 minutes until deep golden and the filling is molten.
10
Remove to a plate and let rest 2 minutes before eating, as the sugar filling inside is very hot.
