High-Protein Cream-Filled Fried Pastries

A yeast-leavened fried dough classic rebuilt around a whipped cottage cheese and whey protein filling instead of pastry cream, keeping the crisp fried shell but swapping the custard heart for something that pulls its weight nutritionally.

Instructions

1
Warm the skim milk to lukewarm and whisk in the yeast and sugar; let it foam for 8 minutes.
2
In a stand mixer, combine bread flour, salt, beaten egg, vegetable oil and the yeast mixture; knead on low for 7 minutes until smooth and elastic.
3
Cover the dough and let it rise somewhere warm for 45 minutes, or until roughly doubled.
4
Punch down the dough, divide into 2 equal pieces, and shape into tight rounds; rest a further 20 minutes on a floured surface.
5
Heat the sunflower oil in a deep pan or fryer to 175°C (347°F), monitoring with a thermometer.
6
Fry the dough rounds for 90 seconds per side until deep golden brown, then lift onto a wire rack to drain and cool.
7
While the donuts cool, blend the drained cottage cheese until completely smooth, then whisk in the whey protein isolate, vanilla extract and honey until the filling is thick and pipeable.
8
Spoon the filling into a piping bag fitted with a narrow nozzle, poke a hole into the side of each cooled donut, and pipe the filling in until it feels heavy.
9
Dust the filled donuts lightly with cocoa powder and serve immediately.
