Goat Cheese Burger
A pan-seared beef patty topped with warmed goat cheese and caramelized onion, served open on a toasted brioche bun with arugula and a smear of Dijon mustard. The cheese turns soft and tangy against the seared crust, balanced by the sweetness of slow-cooked onion and peppery greens.

Instructions
1
Prep
Season the beef patty on both sides with salt and black pepper. Thinly slice the onion and set aside.
2
Sweat
Melt butter in a small skillet over medium-low heat, add onion, and cook 12–15 minutes stirring occasionally until soft and deep golden brown.
3
Sear
Heat olive oil in a separate skillet over medium-high heat and sear the patty 3–4 minutes per side until a dark crust forms and the centre reaches medium doneness.
4
Plate
Lay goat cheese on the patty and cover for 1 minute over low heat until soft. Toast the split bun cut-side down in a dry skillet over medium heat 1–2 minutes until golden. Spread mustard on the bun base, layer arugula, top with the cheese-topped patty and caramelized onion, and close the bun.
