Instructions
1
Prep
Pat the pork chop dry, season both sides with salt and black pepper, and brush with Dijon mustard.
2
Grill
Place the pork chop on a grill over medium-high heat, cook 6 to 7 minutes per side until deep grill marks form and internal temperature reaches 145F (63C).
3
Rest
Transfer the chop to a plate and rest 5 minutes so the juices settle back into the meat.
4
Simmer
Melt butter in a small skillet over medium-low heat, add finely chopped shallot and sweat 2 to 3 minutes until soft and translucent, deglaze with white wine vinegar, add wholegrain mustard and heavy cream, simmer 2 minutes until sauce thickens.
5
Plate
Warm the drained cannellini beans in a small saucepan over low heat 2 minutes with a splash of water, stir in thyme and parsley, warm olive oil in a nonstick pan over medium heat and fry the egg 2 to 3 minutes until white is set, then spoon mustard cream sauce over the pork chop, plate the beans alongside, and top with the fried egg.
