Grilled Bread with Tomato
A gluten-free Spanish tapas of grilled bread rubbed with garlic and topped with fresh grated tomato, finished with olive oil and flaky salt. Served warm as a simple starter, it relies on ripe tomato pulp, good olive oil, and charred bread for contrast between smoky crust and juicy topping.

Instructions
1

2
Grill
Brush bread with olive oil and grill in a hot grill pan 2 minutes per side until deep char lines form and crumb firms.
3
Build
While warm, rub the garlic cut-side over the toast until fragrant, then grate the tomato halves directly onto the bread.
4
Plate
Drizzle the remaining olive oil over the tomato-topped toast, finish with flaky salt, and serve immediately.
