Instructions
1
Prep
Preheat the grill to medium, around 350°F, with a two-zone fire so one side stays cooler for indirect cooking.
2
Build
Combine ground beef, breadcrumbs, egg, diced onion, minced garlic, ketchup, Worcestershire, smoked paprika, salt and pepper, mixing gently until just bound.
3
Shape
Form the mixture into a compact loaf about 4 inches long and set it on an oiled grill tray.
4
Grill
Set the tray over the cooler indirect side, close the lid, and cook 30 minutes at 350°F until the loaf firms up and begins browning.
5
Glaze
Brush BBQ sauce over the top and sides, close the lid, and cook 12 to 15 minutes at 350°F until sticky and 160°F inside.
6
Plate
Rest 10 minutes off the heat, then slice into thick pieces and spoon over any extra glaze pooled on the tray.
