Green Tea Cupcakes

A lightened take on the delicate Japanese-style green tea cupcake, built on a whisked egg-and-yogurt batter instead of butter and cream, finished with a barely-sweet honeyed yogurt topping instead of a heavy buttercream.

Instructions

1
Preheat the oven to 170°C and line 2 holes of a 6-hole muffin tin with paper cases; half-fill the remaining 4 holes with water so the tin bakes evenly.
2
Sift the cake flour, baking powder, cocoa powder (standing in for matcha's characteristic green note here, as matcha itself is not on the palette) and salt together in a bowl.
3
In a separate bowl, whisk the egg and sugar with a hand mixer for 1-2 minutes until pale and slightly thickened.
4
Whisk in the greek yogurt, skim milk, vegetable oil and vanilla extract until smooth and fully combined.
5
Fold the sifted dry ingredients into the wet mixture in two additions, mixing only until no streaks of flour remain.
6
Divide the batter evenly between the 2 lined holes, filling each about two-thirds full.
7
Bake for 16-18 minutes until a skewer inserted into the centre comes out clean and the tops spring back when lightly pressed.
8
Cool the cupcakes in the tin for 5 minutes, then transfer to a wire rack to cool completely.
9
Once fully cool, whisk the honey into the whipped greek yogurt and spoon or pipe a small dollop onto each cupcake just before serving.
