Instructions
1
Preheat the oven to 175°C and butter a 10cm/4 inch round cake tin, lining the base with a small circle of parchment.
2
Sift the flour and baking powder together into a bowl and set aside.
3
In a separate bowl, beat the softened butter and sugar together until pale and creamy, about 2 minutes.
4
Beat in the egg, then fold in the plain yogurt, lemon zest and vanilla extract until smooth.
5
Fold the sifted dry ingredients into the wet mixture gently until just combined - do not overmix.
6
Pour the batter into the prepared tin, smooth the top, and bake for 28-32 minutes until golden and a skewer comes out clean.
7
While the cake bakes, combine the honey, water and lemon juice in a small saucepan and simmer gently for 3-4 minutes until slightly thickened into a light syrup.
8
As soon as the cake comes out of the oven, prick the top all over with a skewer and spoon the warm syrup slowly over it, letting it soak in fully.
9
Leave the cake to cool completely in the tin so it absorbs all the syrup, then turn out onto a wire rack.
10
Scatter the chopped walnuts over the top just before slicing and serving.
