Greek Spoon Sweet Cherries, Lightened
A lightened take on the Greek spoon sweet tradition, where whole cherries are slow-simmered in a thin allulose syrup until glossy and tender, then spooned over cold Greek yogurt instead of the usual sugar-heavy syrup and cream base.

Instructions
1
Pit and halve the cherries, reserving any juice that runs off.
2
Place cherries, allulose, lemon juice, cinnamon and water in a small saucepan over medium heat.
3
Bring to a gentle simmer and cook uncovered for 12-14 minutes, stirring occasionally, until the liquid reduces by roughly a third and turns syrupy.
4
Remove from heat and let the cherries cool to room temperature in the syrup, about 20 minutes, so they firm up slightly as they absorb it.
5
Spoon the cooled cherries and syrup over the chilled Greek yogurt in two small bowls just before serving.
