Greek Honey Yogurt Pudding
A Greek-style set pudding built from thick strained yogurt, warm honey and a touch of milk, lightly set with gelatin and finished with a honey drizzle and chopped walnuts. Instructions

Bloom the gelatin in a small bowl of cold water for 5 minutes until softened.

Warm the whole milk gently in a small saucepan over low heat until just steaming, do not boil.

Remove from heat and stir in the bloomed gelatin until fully dissolved, then whisk in the honey and vanilla extract until smooth.

Let the mixture cool for a few minutes, then whisk in the Greek yogurt until completely smooth with no lumps.

Divide the mixture evenly between 2 pots (180ml each).

Cover and chill in the fridge for at least 4 hours, or until fully set.

Just before serving, drizzle each pot with the reserved honey and scatter over the chopped walnuts.
