Gochujang and Tamarind Mohinga Brunch Bowl

An Australian-Burmese-Korean brunch bowl, Myanmar's national fish noodle soup rebuilt as a composed brunch bowl with a gochujang and tamarind broth so the Burmese lemongrass and fish base and the Korean fermented chilli sweetness and the sweet-sour tamarind depth produce a morning bowl that is warming, complex, and completely original.

Instructions

1
Prep Soak rice vermicelli in cold water 15 minutes. Finely slice 2 shallots and 1 lemongrass stalk (white part). Finely grate 2 garlic cloves, 0.5 thumb ginger. Whisk 1.5 tbsp chickpea flour with 3 tbsp cold water. Have 170g fish fillet, hard-boiled egg, crispy fried shallots, coriander, chilli, lime ready.
2
Saute Heat 1 tbsp oil in a saucepan over medium heat. Add sliced shallots, cook 4 minutes until golden. Stir in garlic, lemongrass, ginger until fragrant, 1–2 minutes. Add turmeric, cumin, gochujang; stir 1 minute until combined.
3
Build Add tamarind paste, fish sauce, palm sugar; stir to combine. Pour in 500ml stock and 100ml coconut milk. Bring to a gentle simmer over medium heat, 2–3 minutes.
4
Simmer Add fish fillet whole to the broth. Poach 8–10 minutes over medium-low heat until the fish is opaque and flakes easily. Remove fish, flake into large pieces.
