Goat Curry

A lighter Indian curry built from lean lamb leg simmered in a tomato-onion masala thickened without heavy cream. Browned in minimal oil, spiced with cumin, coriander, turmeric and garam masala, and finished with yogurt for body. Served with cauliflower rice or a small portion of basmati for a genuinely filling low-calorie plate.
