Fried Salt Cod Fritters
Salt cod is soaked to remove excess salt, flaked, and folded into a light mashed-potato batter with parsley and garlic before shallow-frying in a thin layer of oil until golden. Baking powder lifts the batter for crispness while reduced oil keeps this Italian appetizer under 400 calories.
