Fried Honey Cookies

A lightened take on yakgwa, the Korean deep-fried honey cookie, built with a thinner flour-and-oil dough, a careful low-temperature fry for minimal oil absorption, and a light honey-cinnamon dip finished with pine nuts.

Instructions

1
In a bowl, whisk the all-purpose flour, oat flour, toasted sesame seeds and salt together.
2
Add the melted vegetable oil (6g) and grated ginger juice, rubbing it into the dry mix until it resembles coarse sand.
3
Gather the dough into a ball, flatten slightly, wrap and rest at room temperature for 20 minutes so the flour hydrates.
4
Roll the dough to about 4mm thickness and cut into 4 small rounds or traditional yakgwa-style shapes, docking each lightly with a fork.
5
Heat the deep-frying oil in a small heavy pot to 110°C and slide the cookies in, frying low and slow for 10-12 minutes until they float and turn pale gold, turning once.
6
Lift out with a slotted spoon onto a wire rack set over paper to drain excess oil for 2 minutes.
7
While still warm, dip each cookie briefly into the warmed honey glaze mixed with cinnamon, then return to the rack.
8
Scatter chopped pine nuts over the glazed cookies and let them set for 10 minutes before serving.
