French Apple Tart
A French-style apple tart reworked into two individual baked dishes, where a cocoa-flecked cottage cheese custard stands in for pastry and swaps butter for fibre and protein, keeping the classic apple-and-cinnamon character intact.

Instructions
1
Preheat the oven to 190°C (375°F). Lightly butter-spray or line 2 individual 180ml baking dishes.
2
In a bowl, whisk the cottage cheese until smooth, then beat in the egg, cornstarch, cocoa powder, allulose, cinnamon and vanilla extract until you have a smooth custard base.
3
Toss the apple slices with the lemon juice to stop browning.
4
Divide the custard base evenly between the two dishes, then fan the apple slices on top in overlapping layers, pressing them gently into the custard.
5
Scatter the halved raspberries over and between the apple slices.
6
Bake for 28-30 minutes, until the apples are tender at the edges and the custard is just set with a light golden surface.
7
Remove from the oven and let the tarts cool for 10 minutes before serving so the custard finishes setting.
