French Almond Cake
A rustic French teatime cake built on ground almonds, butter and egg, with a dense yet tender crumb and a toasted flaked almond crust — the kind of simple, honest bake found in boulangeries from Normandy to Provence.

Instructions
1
Preheat the oven to 170°C (340°F) and butter a 10cm/4 inch round cake tin, lining the base with a disc of parchment.
2
In a bowl, whisk the melted butter and sugar together until combined, about 1 minute.
3
Whisk in the beaten egg and vanilla extract until the mixture is smooth and slightly thickened.
4
Sift the cake flour, baking powder and salt over the almond flour, then fold this dry mixture into the wet batter in two additions until just combined — do not overmix.
5
Pour the batter into the prepared tin and smooth the top with a spatula.
6
Scatter the flaked almonds evenly over the surface.
7
Bake for 28-32 minutes until golden brown, risen, and a skewer inserted in the centre comes out clean.
8
Cool the cake in the tin for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
