Instructions

1
Cream the softened butter and sugar together until light and fluffy, about 2 minutes.
2
Beat in the egg and vanilla extract until smooth.
3
Whisk the flour, baking powder and salt together, then fold into the wet mixture to form a soft dough.
4
Mix the green food colouring thoroughly through the dough until an even monster-green shade is achieved.
5
Wrap the dough and chill for 30 minutes to firm it up for rolling.
6
Roll the dough to about 6mm thickness on a lightly floured surface and cut into 2 rectangular 'Frankenstein head' shapes using a knife or cutter.
7
Transfer the cut shapes to a lined baking sheet and bake at 175°C (350°F) for 9-10 minutes until just set but not browned at the edges.
8
Cool completely on a wire rack before decorating.
9
Spread melted white chocolate over the top third of each cookie to form the 'hair' and forehead area, letting it set slightly.
10
Pipe melted dark chocolate to draw the stitched scar, eyes, eyebrows and mouth details onto each cookie.
11
Let the chocolate set fully at room temperature for 10-15 minutes before serving.
