Flan de Queso Keto

A keto-engineered take on Spanish flan de queso, swapping sugar for allulose and leaning on cream cheese and egg yolks for a dense, custardy set with a true bittersweet caramel cap, built to keep net carbs low while staying rich and silky.

Instructions

1
Heat oven to 160°C (325°F) and set a kettle of water to boil for the bain-marie.
2
In a small pan, melt 12g allulose with the 6g water over medium heat, swirling (not stirring) until it turns a deep amber caramel, about 3-4 minutes, then immediately divide between 2 ramekins, tilting to coat the base.
3
Beat the cream cheese until completely smooth, then whisk in the heavy cream until no lumps remain.
4
Whisk in the whole egg, egg yolk, 28g allulose, vanilla extract and salt until just combined; avoid whipping in air.
5
Pass the mixture through a sieve into the caramel-lined ramekins to remove any lumps.
6
Place the ramekins in a deep baking dish, pour boiling water halfway up their sides, and bake for 35-40 minutes until the edges are set but the centre still jiggles slightly.
7
Lift the ramekins from the water bath, cool to room temperature, then cover and chill for at least 4 hours or overnight.
8
Run a thin knife around the edge of each ramekin, place a plate on top, and invert so the flan releases with its caramel sauce pooling around it.
