Walnut Honey Bars
A rustic Italian-leaned bar that leans on toasted walnuts and dark honey for its backbone, baked to a dense, fudgy-leaning crumb rather than a cakey one. The warm honey drizzle and extra walnuts on top turn a simple pantry bake into something that tastes considered, not thrown together.

Instructions
1
Preheat the oven to 175°C (350°F) and line a 10x10cm (4x4 inch) tin with baking paper, leaving an overhang on two sides.
2
In a bowl, whisk together the melted butter, 24g honey and brown sugar until smooth and glossy.
3
Whisk in the beaten egg and vanilla extract until fully combined.
4
Fold in the sifted flour, baking powder and salt just until no dry streaks remain, then fold through the toasted chopped walnuts.
5
Scrape the batter into the prepared tin and spread it evenly into the corners.
6
Bake for 20-22 minutes, until the edges are golden and a skewer inserted in the centre comes out with just a few moist crumbs.
7
Cool the bars in the tin on a wire rack for at least 15 minutes before lifting out using the paper overhang.
8
Once fully cooled, drizzle the warmed honey over the top and scatter with the extra chopped walnuts, then slice into 2 squares to serve.
