Vietnamese Coffee Cupcakes

A lightened take on Vietnamese iced coffee turned into a cupcake: a deeply coffee-and-cocoa sponge made with condensed milk for that signature cà phê sữa đá sweetness, finished with a protein-boosted yogurt topping instead of butter frosting.

Instructions

1
Preheat the oven to 175°C and line 2 holes of a 6-hole muffin tin with paper cases; half-fill the remaining 4 holes with water.
2
Dissolve the instant coffee powder into the cooled espresso and set aside.
3
Sift the cake flour, cocoa powder, baking powder and salt together into a bowl.
4
In a separate bowl, whisk the egg and sugar until pale, then whisk in the condensed milk, vegetable oil, vanilla extract and the coffee-espresso mixture.
5
Fold the wet mixture into the dry ingredients until just combined with no flour streaks.
6
Divide the batter evenly between the 2 lined holes and bake for 16-18 minutes until a skewer comes out clean.
7
Cool the cupcakes in the tin for 5 minutes, then transfer to a wire rack to cool completely.
8
Whisk the whey protein concentrate into the Greek yogurt and condensed milk until smooth to make the topping.
9
Once the cupcakes are fully cool, spoon or pipe the yogurt topping onto each cupcake and dust with the remaining cocoa powder just before serving.
