Instructions
1
Preheat the oven to 180°C and line two holes of a 6-hole muffin tin with paper cases, half-filling the remaining four holes with water.
2
Whisk the melted butter and sugar together in a bowl until no streaks of butter remain, about 1 minute.
3
Beat in the egg, orange zest and vanilla extract until smooth and slightly lightened.
4
Sift the flour, baking powder and salt over the mixture, then pour in the milk and fold gently just until combined — do not overmix.
5
Divide the batter evenly between the two lined holes, filling each about two-thirds full.
6
Hide a small foil-wrapped coin or whole almond into one of the two portions of batter if you want to keep the traditional flomouri lucky charm, pressing it just under the surface.
7
Bake for 19-21 minutes until risen and golden, and a skewer inserted into the centre comes out clean.
8
Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
9
Scatter the toasted sliced almonds over the tops just before serving.
