Turkish Baked Apple with Walnuts and Cinnamon

A Turkish-leaning take on the baked apple, cored and stuffed with walnuts, raisins, honey and cinnamon, then finished with a cocoa-swirled Greek yogurt instead of cream or custard. The yogurt topping adds protein and a fibre-boosting touch of cocoa while keeping the whole dish well under 250 calories a serving.

Instructions

1
Preheat the oven to 190°C (375°F).
2
Core the two apples, leaving the base intact, and sit each one in its own small baking dish.
3
In a small bowl, mix the chopped walnuts, raisins, cinnamon and honey into a thick paste.
4
Pack the walnut-raisin mixture into the cavity of each apple, letting any extra sit on top.
5
Pour 15g of water into the base of each dish to stop the skins catching, then cover loosely with foil.
6
Bake for 30-35 minutes until the apples are tender when pierced but still holding their shape; remove the foil for the final 10 minutes to lightly caramelise the tops.
7
Let the apples rest for 5 minutes out of the oven.
8
Stir the cocoa powder into the Greek yogurt until smooth and spoon it over each warm apple just before serving.
