Thousand Layer Crepe Cake

A delicate Chinese-style crepe cake built from dozens of paper-thin egg crepes stacked with whisper-thin layers of lightly sweetened whipped cream, trimmed into a neat round and dusted with cocoa. Each slice reveals fine ribboned layers rather than a single sponge crumb, giving a soft, custardy bite that is light rather than rich.

Instructions

1
Sift the cake flour into a bowl and whisk in the beaten egg until smooth.
2
Gradually whisk in the whole milk, 12g sugar, melted butter and vanilla extract until you have a thin, lump-free batter; rest it for 10 minutes.
3
Heat a small non-stick crepe pan over low-medium heat and wipe with a trace of butter; ladle in just enough batter to coat the base thinly, swirling to spread.
4
Cook each crepe for 60-90 seconds until set and dry on top with no browning, then flip briefly for 10 seconds; stack cooked crepes on a wire rack to cool completely.
5
Repeat until all batter is used, yielding roughly 10-12 thin crepes, discarding any torn or uneven ones.
6
Whip the heavy cream with the remaining 6g sugar to soft, spreadable peaks.
7
Lay one crepe down and spread a very thin, even layer of whipped cream to the edges; repeat, stacking crepe and cream alternately, finishing with a crepe on top.
8
Dust the top crepe with cocoa powder, trim the edges neatly with a sharp knife, and chill briefly before slicing into wedges.
