Thin Apple Fresh Fruit Bowl, Lightened

A deconstructed take on the classic French thin apple tart, built with no pastry, no butter and barely any added sugar. Paper-thin apple fans stand in for the tart base, finished with crushed raspberries, a honey-vanilla yogurt dollop and toasted almonds.

Instructions

1
Using a mandoline, shave the apple into paper-thin rounds, discarding the core.
2
Toss the apple slices with lemon juice, honey and cinnamon in a bowl until evenly coated and glistening.
3
Fan the dressed apple slices out in two shallow bowls in a loose spiral, mimicking a thin tart without any pastry base.
4
Scatter the crushed raspberries over the apple in each bowl.
5
Whisk the Greek yogurt with vanilla extract until smooth and spoon a dollop into the centre of each bowl.
6
Scatter the toasted chopped almonds over the top and chill for 15 minutes before serving.
