Thai Tea Cupcakes

A protein-boosted riff on Thailand's iconic orange-hued iced tea, baked into a soft spiced cupcake with whey folded into the crumb and a light condensed-milk yogurt frosting standing in for the usual sweetened creamer.

Instructions

1
Preheat the oven to 175°C and line 2 holes of a 6-hole muffin tin with paper cases; half-fill the remaining 4 holes with water.
2
Steep the skim milk with a pinch of strong black tea leaves (plus the cardamom and star-anise) over low heat for 3 minutes, then strain and cool slightly; stir in the food colouring if using.
3
Sift the flour, whey protein isolate and baking powder together into a bowl.
4
In a separate bowl whisk the egg, egg white, sugar and vanilla extract until pale, then whisk in the 35g greek yogurt and the cooled Thai tea milk.
5
Fold the wet mixture into the dry ingredients in two additions until just combined and no flour streaks remain.
6
Divide the batter evenly between the 2 lined holes and bake for 16-18 minutes until a skewer comes out clean and the tops spring back.
7
Cool the cupcakes in the tin for 5 minutes, then transfer to a wire rack and cool completely, about 20 minutes.
8
Whisk the 30g greek yogurt with the condensed milk until smooth and spoon or pipe over the cooled cupcakes just before serving.
