Sikhye-Style Rice Punch with Pear and Pomegranate
A lightened take on Korea's classic sikhye, this chilled rice punch is built on a thin malted-rice base sweetened gently with honey and monk fruit rather than the usual heavy sugar syrup, then finished with crisp pear matchsticks, ruby pomegranate seeds for fibre, and a scatter of toasted pine nuts. It keeps the drink-like, faintly nutty sweetness of the original while landing at a fraction of the calories.
