Saffron Milk Shaved Ice
A cooling North Indian-inspired shaved ice built from saffron- and cardamom-infused milk sweetened with condensed milk, frozen in a shallow tray and repeatedly forked into fine, fluffy golden crystals. Finished with chopped pistachio, it eats like a milky, fragrant granita rather than a syrup-soaked ice.

Instructions

Warm the whole milk gently in a small pan until just steaming, then crumble in the saffron threads and let steep off the heat for 5 minutes to bloom the colour and aroma.

Stir the condensed milk, sugar and ground cardamom into the warm saffron milk until fully dissolved, then whisk in the water to loosen the mixture.

Taste and adjust sweetness if needed, then pour the mixture into a shallow freezer-safe tray so it sits no more than 2cm deep.

Freeze uncovered for 1 hour, then drag a fork through the half-set mixture to break up any ice forming at the edges.

Return to the freezer and repeat the forking/scraping every 30-40 minutes for a further 2-3 hours, breaking the mixture into fine, fluffy, pale-gold crystals throughout.

Once fully frozen into loose shards with no liquid pockets remaining, scrape the entire tray with the tines of a fork to heap up light, snowy crystals.

Pile the shaved ice into two chilled glasses or bowls, scatter the chopped pistachio over the top, and serve immediately while still fluffy.
