Instructions
1
Preheat the oven to 170°C (340°F) and line a 10x10cm square tin with baking paper, letting it overhang on two sides.
2
Melt the butter and whisk it with the honey and brown sugar until glossy and fully combined.
3
Whisk in the beaten egg and lemon zest until the batter is smooth and slightly thickened.
4
Sift the all-purpose flour, almond flour, baking powder and salt over the wet mixture and fold through until just combined with no dry streaks.
5
Fold in the toasted pine nuts, reserving a few for the top.
6
Pour the batter into the prepared tin, spread level, and scatter the reserved pine nuts over the surface.
7
Bake for 20-22 minutes until the top is golden and a skewer inserted in the centre comes out with only a few moist crumbs.
8
Cool the bar fully in the tin on a wire rack for at least 20 minutes before lifting out using the paper overhang.
9
Drizzle the warmed honey over the top and scatter the extra toasted pine nuts just before slicing into one square to serve.
