Mint Water Ice
A classic Greek-style granita built from nothing more than fresh mint, sugar, water and a touch of lemon, repeatedly scraped as it freezes into a loose, crystalline, intensely refreshing ice.

Instructions
1
In a small saucepan, combine the water and sugar and bring to a bare simmer, stirring until the sugar fully dissolves, about 2 minutes.
2
Remove from the heat, add the bruised mint leaves, cover and steep for 15 minutes to infuse.
3
Strain out the mint leaves, pressing lightly to extract the flavour, then stir in the lemon juice.
4
Pour the cooled syrup into a shallow tray (about 350ml) and place in the freezer.
5
After 45 minutes, scrape the half-frozen edges into the centre with a fork; repeat every 30-40 minutes for about 3 hours until the whole tray is a light, fluffy mass of ice crystals.
6
Scrape into chilled glasses or bowls and serve immediately in 2 scoops per portion.
