Middle Eastern Milk Bread Pudding, Lightened
A lightened take on the classic Middle Eastern milk bread pudding, built on skim milk and a single egg instead of cream and butter, scented with saffron and cardamom, with cocoa stirred through for fibre and fresh raspberries on top instead of a sugar syrup.

Instructions
1
Preheat the oven to 170°C (340°F) and lightly grease two 180ml ramekins.
2
Tear the white bread into small pieces and divide between the ramekins.
3
Warm the skim milk gently, then steep the saffron threads in 1 tablespoon of it for a few minutes.
4
Whisk the beaten egg with sugar, ground cardamom, vanilla extract and the saffron milk, then stir in the remaining warm skim milk.
5
Whisk the cocoa powder into the custard mixture until fully dissolved and smooth.
6
Pour the custard evenly over the bread in both ramekins, pressing the bread down gently so it soaks up the liquid.
7
Let the ramekins sit for 10 minutes so the bread fully absorbs the custard.
8
Place the ramekins in a deep baking tray and pour hot water halfway up their sides to create a water bath.
9
Bake for 25 minutes until just set with a slight wobble in the centre.
10
Remove from the water bath and allow to cool for 10 minutes.
11
Top each pudding with fresh raspberry halves and chopped pistachio just before serving.
