Mexican Corn Ice Cream (Helado de Elote)
A no-churn take on Mexico's beloved elote-inspired ice cream, where sweet corn is simmered into milk with cinnamon, strained smooth, then folded into whipped cream and condensed milk for a dense, custardy scoop that tastes like a frozen version of the street-corn classic.

Instructions
1
Simmer fresh or thawed corn kernels (about 70g worth, pureed into the whole milk off-card as the corn base) gently in the whole milk with the ground cinnamon for 8 minutes until softened and fragrant.
2
Blend the warm corn-milk mixture until smooth, then pass through a sieve into a bowl, pressing hard to extract all the liquid and discarding the fibrous solids.
3
Stir the sugar and salt into the warm corn milk until fully dissolved, then whisk in the condensed milk and let the mixture cool to room temperature.
4
In a separate chilled bowl, whip the heavy cream with a hand mixer to soft peaks.
5
Fold the cooled corn-condensed milk base into the whipped cream in three additions, keeping as much air in the mixture as possible.
6
Pour into a small freezer-safe tub, smooth the top, and freeze for at least 6 hours or until firm, stirring once with a fork after the first hour to break up any ice crystals.
7
Scoop into two chilled bowls, dust with the reserved cinnamon, and serve immediately.
