Instructions
1
Warm 1 tsp of milk gently and steep the saffron threads in it for 10 minutes until the milk turns deep gold.
2
In a chilled bowl, whip the heavy cream with a hand mixer to soft peaks, about 2-3 minutes.
3
Gently fold in the condensed milk, honey, saffron-infused milk, and ground cardamom until fully combined and streak-free.
4
Fold in the 12g chopped pistachios, keeping the mixture as airy as possible.
5
Spoon the mixture into a small freezer-safe tub (about 500ml), level the surface, and cover tightly.
6
Freeze for at least 6 hours or until firm enough to scoop.
7
Scoop into two bowls, scatter the reserved 6g chopped pistachios over the top, and serve immediately.
