High-Protein Walnut Baklava Bites

A high-protein reimagining of Turkish baklava that keeps the walnut-and-honey soul of the original but rebuilds the filling around whey protein, Greek yogurt and blended cottage cheese instead of stacks of buttered phyllo, so each bite still shatters and drips with honey syrup but carries a genuine protein payload.

Instructions

1
Preheat oven to 180°C (350°F) and line a small baking sheet.
2
Blend the cottage cheese until completely smooth, then whisk in the greek yogurt and whey protein isolate to form a thick, pasty protein filling.
3
Toss the finely chopped walnuts with cinnamon and fold half of the mixture into the protein paste.
4
Roll the flour dough out as thin as possible into two small rectangular sheets, roughly the size of the tin, brushing each lightly with melted butter.
5
Layer one sheet in the tin, spread the protein-walnut filling evenly across it, scatter the remaining chopped walnuts on top, then cover with the second sheet, brushing the top with the last of the butter.
6
Score the top into 4 small diamond or square pieces with a sharp knife, cutting just through the top layer.
7
Bake for 16-18 minutes until deep golden and crisp at the edges.
8
While baking, warm the honey, lemon juice and water in a small pan over low heat for 2 minutes to make a thin syrup, then remove from heat.
9
As soon as the pastry comes out of the oven, spoon the warm syrup evenly over the hot pastry so it soaks into the scored lines.
10
Scatter the crushed pistachio over the top and let cool completely in the tin, about 20 minutes, before cutting fully through into 4 pieces.
