High-Protein Quince Dessert with Yogurt Cream

A protein-boosted reworking of the Turkish ayva tatlısı, where quince-style poached fruit in a cinnamon syrup is crowned with a thick whey-enriched Greek yogurt cream instead of the traditional kaymak, keeping the perfumed fruit character intact while nearly tripling the protein per serving.

Instructions

1
Peel, halve and core the apples (standing in for quince), then rub cut surfaces with half the lemon juice to stop browning.
2
Place apples cut-side down in a small pan with the water, remaining lemon juice, sugar and cinnamon.
3
Bring to a gentle boil, then reduce to a simmer, cover and cook 25-30 minutes until the fruit is tender and the liquid has reduced by about a fifth, basting occasionally.
4
Lift the fruit out and let the poaching syrup simmer uncovered a further 2-3 minutes to concentrate slightly, then cool both fruit and syrup to room temperature.
5
Whisk the whey protein isolate into the chilled strained Greek yogurt until completely smooth with no lumps.
6
Divide the poached fruit between 2 bowls, spoon over the reduced syrup, top each with the protein yogurt cream and scatter over the crushed walnuts just before serving.
