High-Protein Egg Custard Pie

A protein-boosted take on the Cantonese egg custard tart, reworked as individual pies with a crisp shortcrust shell cradling a silky, lightly sweetened custard thickened with whole egg, egg whites and whey protein isolate instead of extra yolks and cream.

Instructions

1
Rub the cold butter cubes into the flour and a pinch of the salt until the mixture resembles coarse crumbs, then bind with the iced water into a firm dough.
2
Rest the dough wrapped in the fridge for 20 minutes, then roll thin and line two 8cm/3 inch tart tins, trimming the edges and chilling again for 10 minutes.
3
Blind-bake the shells at 190°C/375°F for 10 minutes until pale gold and just set, then cool slightly.
4
Whisk the whole egg and egg whites together, then whisk in the whey protein isolate until fully dissolved with no lumps.
5
Warm the skim milk until just steaming, then whisk in the sugar and vanilla extract until dissolved.
6
Slowly stream the warm milk into the egg mixture, whisking constantly to temper without scrambling, then strain through a sieve for a silky custard.
7
Divide the custard between the two baked shells and bake at 160°C/320°F for 18-20 minutes until the centre has a gentle wobble but is no longer liquid.
8
Cool the pies to room temperature on a rack, then chill for at least 1 hour before slicing to allow the custard to fully set.
