Green Tea Glazed Donut

A yeasted Japanese-style ring donut, lightened by trimming the egg to whites only and swapping richer dairy for skim milk and yogurt, fried briefly so only a thin shell of oil is absorbed, then finished with a matcha-toned cocoa glaze for colour and a touch of fibre without the usual sugar load.

Instructions

1
Whisk the warmed skim milk with the yeast and a pinch of the sugar; let it foam for 5 minutes.
2
In a bowl combine the all-purpose flour, cake flour, remaining sugar and salt, then stir in the yeast mixture, egg white and greek yogurt to form a soft dough.
3
Knead on a lightly floured surface for 6-7 minutes until smooth and elastic, then place in a lightly oiled bowl, cover and let rise for 45 minutes until doubled.
4
Punch down the dough, divide into 2 equal pieces, and shape each into a ring; place on a floured tray and rest a further 20 minutes.
5
Heat the vegetable oil in a deep pan to 175°C using the thermometer to monitor temperature.
6
Fry the donuts for 60-75 seconds per side until golden brown, then lift onto a wire rack to drain and cool slightly.
7
Whisk the cocoa powder, allulose and the reserved 10g skim milk into a smooth green-tea-toned glaze (tint if desired) and dip the top of each warm donut.
8
Let the glaze set for 5 minutes on the wire rack before serving.
