Green Tea Caramel Custard

A lightened Korean-style take on caramel custard, built on skim milk and whole egg instead of cream, with cocoa powder folded in to add fibre and depth without raising the calorie count, all under a classic hardened sugar caramel.

Instructions

1
Heat the oven to 160°C (320°F) and set a kettle of water to boil for the water bath.
2
Make the caramel in a small pan, melt the sugar with the water over medium heat without stirring, swirling the pan occasionally, until it turns deep amber, about 4-5 minutes.
3
Immediately divide the hot caramel between 2 ramekins, swirling to coat the base, then set aside to harden.
4
Warm the skim milk in a small pan over low heat until just steaming but not boiling, then remove from heat.
5
In a bowl, whisk the egg with the monk fruit extract, vanilla extract and salt until just combined, avoiding excess foam.
6
Sift the cocoa powder into the warm milk and whisk until fully dissolved and smooth.
7
Slowly pour the warm milk mixture into the egg mixture, whisking constantly to temper without scrambling.
8
Strain the custard through a fine sieve into the caramel-lined ramekins to remove any foam or lumps.
9
Place the ramekins in a deep baking dish and pour boiling water around them to reach halfway up the sides.
10
Bake for 32-35 minutes, until the custards are just set with a slight wobble in the centre.
11
Remove ramekins from the water bath and let cool to room temperature, then cover and chill for at least 3 hours.
12
To serve, run a thin knife around the edge of each ramekin and invert onto a small plate, letting the caramel sauce spill over the custard.
