Fried Honey Doughnuts
A lightened take on Spanish fried doughnuts, built with a part whole-wheat dough and greek yogurt in place of heavier enrichments, fried briefly and finished with a thin honey drizzle and a dusting of cocoa instead of a sugar coating.

Instructions
1
Whisk the all-purpose flour, whole wheat flour, baking powder, cinnamon and salt together in a bowl.
2
In a separate bowl beat the egg with the greek yogurt and orange zest until smooth.
3
Fold the wet mixture into the dry ingredients to form a soft, slightly sticky dough; do not overmix.
4
Rest the dough for 15 minutes so the flour hydrates and the dough firms up enough to shape.
5
Heat the sunflower oil in a fry pan to 175C, using a thermometer to hold the temperature steady.
6
Wet your hands lightly and shape the dough into one small doughnut ring per serving, 2 total.
7
Fry the doughnuts for about 90 seconds per side until deep golden and cooked through, then lift onto a paper towel to drain.
8
Warm the honey slightly and drizzle it over the hot doughnuts.
9
Finish with a light dusting of cocoa powder and serve immediately.
