Date Walnut Loaf Cake

A dense, moist spiced loaf built on sticky softened dates and toasted walnuts, finished with a honey glaze and a crown of walnut halves — a Middle Eastern pantry classic that leans on cardamom rather than cinnamon for its warmth.

Instructions

1
Put the chopped dates and baking soda in a heatproof bowl, pour over the boiling water, stir once and leave to sit for 10 minutes until softened and dark.
2
Preheat the oven to 170C (340F) and line a small loaf tin (roughly 10x6cm base) with baking paper.
3
Cream the softened butter and brown sugar together until light, about 2 minutes, then beat in the egg a little at a time.
4
Sift the flour, baking powder, cardamom and salt into the butter mixture and fold in gently until just combined.
5
Mash the soaked dates slightly with a fork (keep their soaking liquid) and fold the whole lot into the batter along with the chopped walnuts.
6
Scrape the batter into the prepared tin, smooth the top, and bake for 32-36 minutes until a skewer inserted in the centre comes out clean.
7
Cool the loaf in the tin for 10 minutes, then turn out onto a wire rack to cool completely.
8
Once cool, brush the top with warmed honey and press the walnut halves into the glaze before slicing.
