Instructions
1
Preheat the oven to 170°C (340°F) and lightly grease two 180ml ramekins.
2
Tear the white bread into small cubes and toast lightly in a dry pan for 2-3 minutes until just dried out, then divide between the ramekins.
3
In a bowl, whisk together the skim milk, egg, egg white, sugar, vanilla extract, cinnamon and cocoa powder until the cocoa is fully dissolved and no lumps remain.
4
Whisk the whey protein isolate into the custard base a little at a time until smooth, taking care not to over-whisk and introduce too much air.
5
Pour the custard mixture evenly over the bread cubes in both ramekins, pressing the bread down gently so it soaks up the liquid.
6
Let the ramekins sit for 10 minutes so the bread fully absorbs the custard before baking.
7
Place the ramekins in a water bath (a deep tray with hot water reaching halfway up the sides) and bake for 25 minutes, until just set with a slight wobble in the centre.
8
Remove from the oven and water bath, and cool for 10 minutes on a rack.
9
Top each pudding with fresh raspberries just before serving.
