Coconut Pandan Protein Muffins

A protein-engineered take on Vietnamese coconut-pandan cake, reshaped into single-serve muffins built on cottage cheese and whey isolate instead of butter and coconut cream, keeping the fragrant pandan-coconut flavour while delivering a genuinely high-protein, low-fat finish.

Instructions

1
Preheat the oven to 175°C and line 2 holes of a 6-hole muffin tin with paper cases, half-filling the remaining 4 holes with water.
2
Blend the cottage cheese, egg, egg white and coconut milk together until completely smooth with no lumps of cheese remaining.
3
Whisk in the whey protein isolate, oat flour, coconut flour, baking powder, allulose, desiccated coconut and salt until just combined into a thick batter.
4
Stir in the vanilla extract and a drop of green food colouring (or pandan extract if using) until the batter is evenly pale green.
5
Divide the batter evenly between the 2 lined holes, filling each about three-quarters full.
6
Bake for 20-22 minutes until well risen, lightly golden at the edges and a skewer inserted into the centre comes out clean.
7
Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
8
Scatter the toasted desiccated coconut over the tops just before serving.
