Coconut Pandan Muffins

A lightened take on Vietnamese coconut-pandan flavours, these muffins swap butter and refined sugar for Greek yogurt, oat flour and whey protein while keeping the fragrant green pandan colour and toasted coconut finish. Each cupcake-sized muffin is soft, lightly sweet and carries a genuine protein floor without feeling like a diet food.

Instructions

1
Preheat the oven to 175°C (350°F) and line 2 holes of a 6-hole muffin tin with paper cases; half-fill the remaining 4 holes with water.
2
In a bowl, whisk together the oat flour, coconut flour, whey protein isolate, baking powder and salt until no lumps remain.
3
In a separate bowl, beat the egg, then whisk in the greek yogurt, coconut milk, allulose, vanilla extract and a drop of green food colouring until smooth and pale green.
4
Pour the wet mixture into the dry ingredients and fold gently until just combined, then fold in the 8g desiccated coconut without overmixing.
5
Divide the batter evenly between the 2 lined muffin holes, filling each about three-quarters full.
6
Bake for 18-20 minutes, until a skewer inserted into the centre comes out clean and the tops spring back when pressed.
7
Transfer the muffins to a wire rack and cool for at least 10 minutes.
8
Scatter the toasted desiccated coconut over the tops just before serving.
