Instructions

1
Preheat the oven to 175°C (350°F) and line a 10x10cm (4x4 inch) tin with parchment, leaving an overhang for easy lifting.
2
In a bowl, mash the 45g banana until smooth, then whisk in the beaten egg, Greek yogurt, brown sugar and vanilla extract until combined.
3
In a separate bowl, stir together the oat flour, coconut flour, desiccated coconut, baking powder and salt.
4
Fold the dry mixture into the wet banana mixture until just combined and no dry streaks remain; do not overmix.
5
Scrape the batter into the prepared tin, smoothing the top level with the back of a spoon.
6
Bake for 20-22 minutes until the top springs back lightly and a skewer inserted in the centre comes out with only a few moist crumbs.
7
Cool the bars fully in the tin on a wire rack for at least 15 minutes before lifting out using the parchment overhang.
8
While the bars cool, toast the fresh coconut shavings in a dry pan over low heat for 1-2 minutes until lightly golden, watching closely so they don't burn.
9
Scatter the toasted coconut shavings over the top of the cooled bars, then slice into 2 squares to serve.
