Instructions

1
Prep Preheat oven to 350°F and line a baking sheet with parchment. Whisk together flour, cocoa powder, baking soda and salt until combined with no streaks.
2
Cream Beat softened butter and sugar together for 1 minute until pale and fluffy. Stir in milk and vanilla, then fold in dry ingredients until smooth.
3
Bake Drop batter as 2 mounds spaced apart on the sheet. Bake at 350°F for 10–12 minutes until tops spring back when lightly pressed.
4
Cool Transfer cookies to a rack and cool completely for 20 minutes until fully firm, ensuring they are cool before filling.
5
Melt Combine dark chocolate, heavy cream and butter in a heatproof bowl and melt over simmering water on low heat for 2–3 minutes, stirring until smooth and glossy.
6
Whisk Remove from heat. Whisk powdered sugar into the chocolate mixture until the fudge thickens to a spreadable paste in about 1 minute.
7
Chill Let fudge icing cool at room temperature for 10 minutes until it holds a soft peak when lifted with a spoon.
8
Build Spread fudge filling thickly over the flat side of one cookie and press the second cookie on top, flat side down.
9
Store Keep the sandwich cookie in an airtight container at room temperature and eat within 2 days for the softest texture.
