Instructions
1
Prep
Pat the pork loin chop dry, season lightly with salt. Bring small pots of water to boil for eggs and noodles separately.
2
Boil
Lower eggs gently into boiling water and cook 7 minutes over medium heat until soft-set yolk. Transfer to ice bath immediately.
3
Sear
Heat a small skillet over medium-high heat with oil. Sear pork chop 3–4 minutes per side until browned and faintly pink inside.
4
Rest
Let pork rest 10 minutes, then slice thinly against the grain.
5
Boil
Cook soba noodles 4–5 minutes until just tender. Drain and rinse under cold water until fully cooled.
6
Whisk
In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, grated ginger, and sugar until sugar dissolves.
7
Toss
In serving bowl, toss cold noodles with dressing, cucumber, carrot, scallion, and edamame until evenly coated.
8
Plate
Peel and halve soft-boiled eggs. Arrange eggs and sliced pork on dressed noodles, scatter sesame seeds, serve cold.
