Instructions
1
Heat the oven to 180°C (350°F) and line 2 holes of a 6-hole muffin tin with paper cases, half-filling the remaining 4 holes with water.
2
Whisk together the flour, cocoa powder, baking powder and salt in a bowl.
3
In a separate bowl, beat the egg with the sugar until pale, then whisk in the Greek yogurt, skim milk, cooled espresso and vanilla extract until smooth.
4
Fold the wet mixture into the dry ingredients until just combined, with no streaks of flour remaining.
5
Divide the batter evenly between the 2 lined holes, filling each about two-thirds full.
6
Bake for 18-20 minutes until a skewer inserted into the centre comes out clean, then transfer to a wire rack to cool completely.
7
While the cupcakes cool, beat the softened cream cheese, extra Greek yogurt and allulose together until smooth, then stir in the dissolved coffee powder.
8
Once the cupcakes are fully cool, swirl or pipe the coffee cream cheese topping over each one and serve.
