Coconut Flan
A Mexican-style coconut flan built on a classic egg-and-condensed-milk custard base enriched with coconut milk, set over a layer of hand-cooked amber caramel, baked gently in a water bath until silken, then chilled and inverted so the caramel sauce cascades down the sides.

Instructions
1
Heat the sugar with the water in a small saucepan over medium heat without stirring, swirling occasionally, until it turns a deep amber caramel, about 5-6 minutes.
2
Immediately divide the hot caramel between 2 ramekins (180ml each), tilting to coat the base, and set aside to harden.
3
Whisk the whole egg and egg yolk together in a bowl until smooth, then whisk in the condensed milk, coconut milk, whole milk and vanilla extract until fully combined.
4
Strain the custard mixture through a sieve into the caramel-lined ramekins to remove any egg strands.
5
Place the ramekins in a deep baking dish and pour hot water halfway up the sides to create a water bath.
6
Bake at 160°C (325°F) for 35-40 minutes until the custards are just set with a slight wobble in the centre.
7
Remove ramekins from the water bath and cool to room temperature, then chill in the fridge for at least 4 hours or overnight.
8
Run a thin knife around the edge of each ramekin, invert onto a plate so the caramel sauce pools over the custard, and scatter with toasted desiccated coconut before serving.
