Classic Apple Tart
A classic American-style apple tart built on a crisp, buttery shortcrust base and finished with thin overlapping apple slices baked until tender and burnished with a warm golden syrup glaze. Cinnamon and brown sugar bring gentle spice and caramel depth without masking the fruit.

Instructions
1
Rub cold cubed butter into sifted flour, sugar and salt until the mixture resembles coarse breadcrumbs, then stir in ice-cold water a little at a time until a dough just comes together.
2
Shape the dough into a disc, wrap and chill for 30 minutes before rolling out thinly and lining two 8cm individual tart tins, trimming excess and pricking the bases with a fork.
3
Chill the lined tins for 10 minutes, then line with parchment and baking beans and blind bake at 200°C (390°F) for 10 minutes; remove beans and parchment and bake a further 5 minutes until pale gold.
4
Toss the thinly sliced apple with lemon juice, brown sugar and cinnamon until evenly coated.
5
Arrange the apple slices in overlapping circles inside the baked tart shells and brush with melted butter.
6
Bake at 190°C (375°F) for 20-22 minutes until the apples are tender at the edges and lightly caramelised.
7
Cool the tarts on a wire rack for 10 minutes, then brush the warm apples with warmed golden syrup to glaze before serving.
