Instructions
1
Line a small baking sheet with parchment and arrange the chopped pecans into 4 small clusters, about 7-8g each, spaced apart.
2
In a small saucepan, warm the chopped dates with the heavy cream over low heat, mashing with a fork until it forms a soft, sticky caramel-like paste, about 3 minutes.
3
Stir the vanilla extract into the date caramel, then spoon a small portion over each pecan cluster, pressing gently so the caramel binds the nuts together.
4
Melt the dark chocolate in a double boiler over barely simmering water, stirring until smooth.
5
Spoon the melted chocolate over each caramel-topped pecan cluster, covering completely.
6
Sprinkle each candy with a few flakes of salt while the chocolate is still wet.
7
Transfer the tray to the fridge and chill for 20 minutes until the chocolate is fully set and the candies hold their shape.
